The panel will discuss the subtle changes in Asian cuisine as it confronts, adapts and integrates to distinct gastronomic cultures around the world. Panelists will consider the culinary migrations of Asian cuisines; assess how it is perceived globally; and how it has been impacted by globalization.

Madhur Jaffrey is an award winning actress and best selling author who has written over 15 cookery books. She is regarded by many as the world's foremost authority on Indian food. Hemant Oberoi is the Grand Executive Chef at the Taj Mahal Palace and Hotels, Mumbai. A multiple award winner, Chef Oberoi is widely credited with introducing various niche restaurants like Souk, Wasabi and Side Wok to the Indian palate. Matthew Cropp has worked in hotels and restaurants across Asia including China, Japan, Korea, and most recently India. A certified Pastry chef, Matthew has worked with some of the leading names in the gourmet industry and won many awards including Asia's BEST—Singapore Salon Culinaire award. Neville Vazifdar is a self confessed "foodie" who credits his endearing passion for Chinese food as the reason for introducing what has today become the byword for authentic Chinese cuisine in India—Royal China. Nikhil Chib is a restaurateur with certificates in economics, finance, and psychoanalysis, and is recognized for his pioneering efforts in promoting Asian cuisine in his restaurant "Busaba." Rashmi Uday Singh, prolific author and winner of the prestigious "World Gourmand Cookbook Award" for Around the World in 80 Plates, also manages the "Good Food Academy" and is Chairperson of Central Asia Region for London's "The World's Best 50 Restaurants Academy."
