Shanghai Egg Pouch Soup

Ingredients

125 g/4 oz bean thread vermicelli
6 dried shiitake mushrooms
half a Chinese cabbage (wong nga bak)
2 litres/4 pints/8 cups chicken stock

Egg pouches
125 g/4 oz minced (ground) pork
1 spring onion (scallion), finely chopped
1/4 teaspoon finely grated fresh ginger
1/2 teaspoon salt
1 teaspoon cornflour (cornstarch)
3 eggs
pinch of salt

Niban Dashi (Secondary Dashi)

Ingredients

1.5 litres/3 pints/6 cups cold water
kelp and bonito reserved from Ichiban Dashi recipe
extra 3 tablespoons dried bonito flakes

Directions

Put water into a saucepan with reserved kelp and bonito and bring slowly to the boil. Lower heat and simmer uncovered about 20 minutes. Add the extra bonito flakes and immediately remove pan from heat. When flakes have settled, pour through a muslin-lined sieve. This stock is not as delicate as primary dashi.

Miso Soup

Serves 4.

Ingredients

5 cups dashi
2 tablespoons aka miso (red bean paste)
4 cubes tofu (bean curd)
2 spring onions (scallions), sliced diagonally
2 sliced mushrooms

Directions

Bring dashi to the boil, then mix some of the hot liquid with the bean paste in a small bowl, stirring until smooth. Pour mixture back into saucepan, stir well, add bean curd and spring onions and return to the boil. Simmer for a few seconds only.

Korean Dumpling Soup

Ingredients

2 litres/4 pints/8 cups beef stock
2 tablespoons light soy sauce
salt to taste
omelette strips to garnish
toasted, crumbled nori to garnish

Dumplings
125 g/4 oz pork mince
125 g/4 oz lean beef mince
3 spring onions (scallions), finely chopped
1 tablespoon toasted, crushed sesame seeds
1 teaspoon chopped garlic
1/2 teaspoon salt
1/4 teaspoon ground black pepper
125 g/4 oz wonton pastry squares

Ichiban Dashi (Primary Dashi)

Not every home has a scale which measures small amounts accurately, so included are  some size and volume equivalents for the seaweed and bonito flakes.

Ingredients

1 litre/2 pints/4 cups cold water
5 cm/2 in square of dried kelp (kombu)
3 tablespoons dried bonito flakes

Directions

Put water and dried kelp into a saucepan and bring slowly to a simmer. Remove kelp just before water comes to the boil. (Reserve kelp to make Niban Dashi.)

Crab and Sweet Corn Soup

3 ears fresh tender corn or 400 g/14 oz can cream style corn
1.5 litres/3 pints/6 cups chicken stock
2 tablespoons cornflour (cornstarch)
250 g/8 oz crab meat, fresh or frozen
3 tablespoons Chinese wine or dry sherry
1 tablespoon oyster sauce or light soy sauce
salt and white pepper
1 tablespoon finely chopped spring onions (scallion)
2 tablespoons chopped fresh coriander

salt and white pepper to taste

2 tablespoons cornflour (cornstarch)

Some butchers and delicatessens sell the off-cuts as soup pieces, and these are excellent for making stock.

Ingredients

1 large whole chicken or 2 kg/4 lb chicken soup pieces
2 spring onions with leaves
6 slices fresh ginger
1/2 teaspoon whole black peppercorns
3 sprigs celery leaves
2 teaspoons salt

1 small roasting chicken
6 slices fresh ginger
2 spring onions (scallions), sliced
2 tablespoons Chinese wine or sherry
1 tablespoon light soy sauce
1/2 teaspoon salt
2 tablespoons wolfberries
few drops oriental sesame oil

Chicken Soup with Healing Herbs

Ingredients

1 small roasting chicken
1 tablespoon dried lesser galangal slices
5 slices fresh ginger
5 pieces dried tangerine peel
1 teaspoon salt
1 teaspoon whole peppercorns
2 tablespoons wolfberries (optional)

Directions

Cut off the tail of the chicken, taking care to cut high enough so that the two glands on either side are also eliminated. Remove fat from body cavity, and all the skin (except on the wings). Cut chicken into pieces through the bone, Chinese style.
