Fruit Chutney
Ingredients
2 large unripe mangoes or cooking apples
150 g/5 oz dried apricot halves
100 g/3 1/2 oz sultanas (golden raisins)
1 tablespoon finely chopped fresh ginger
1 tablespoon finely sliced garlic
1-2 tablespoons chopped fresh red chilies
500 g/1 lb/2 cups sugar
500 ml/1 pint/2 cups white vinegar
3 teaspoons salt
1 teaspoon cumin seeds
1/2 teaspoon nigella seeds
1/2 teaspoon black mustard seeds
2 teaspoons garam masala
Directions
Peel and slice mangoes or peel, core and dice apples. Put all ingredients in a non-aluminium pan, add 1 cup water and stir over medium heat until sugar is dissolved.
Simmer for 30 minutes or until thick, and bottle in clean, dry, hot jars. Seal airtight.
